Instructions

Roasting the Vegetables:

  1. Preheat Oven:
    Begin by preheating your oven to 200°C (392°F) for about 20 minutes.

  2. Prepare Vegetables:
    In a mixing bowl, combine the yellow zucchini, green zucchini, yellow and red bell peppers, and onion. Add in the dried oregano, basil, and red chilli flakes. Drizzle generously with extra virgin olive oil.

  3. Toss & Season:
    Toss the vegetables thoroughly, ensuring each piece is well coated with the olive oil and spices. Then, spread them out evenly on a lined baking sheet. Season with sea salt and black pepper to taste.

  4. Roast the Vegetables:
    Place the baking sheet in the preheated oven and roast the vegetables for about 20 minutes, or until tender and slightly caramelized. Once done, remove from the oven and set aside to cool.

  5. Chilli Flakes Mix:
    After cooling, mix in a teaspoon of red chilli flakes into the roasted vegetables. Set aside for later use.


Making the Dough:

  1. Activate the Yeast:
    In a small bowl, warm the ½ cup of water and ½ cup of milk until lukewarm (not scalding). Add the sugar, stirring to dissolve. Sprinkle the active dry yeast into the mixture and stir to form a paste. Cover the bowl with cling film and leave it in a warm spot for about 1 hour. The mixture will become frothy during this time.

  2. Prepare the Dough:
    Once the yeast mixture is frothy, add the olive oil, dried basil, oregano, salt, 3 ½ cups of whole wheat flour, and 1 ½ cups of water into the bowl. Mix the ingredients until they form a rough dough.

  3. Knead the Dough:
    Transfer the dough onto a clean surface and knead it for about 8-10 minutes using the heels of your palms. The dough should become soft, smooth, and pliable. If the dough is too sticky, you can lightly flour your hands and the surface.

  4. Let the Dough Rise:
