Ingredients:

  • 1 cup dark brown sugar
  • 1/4 cup butter
  • 1/2 cup margarine
  • 1/4 cup applesauce
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease cookie sheets with cooking spray.
  2. Beat together the dark brown sugar and butter until well blended.
  3. Add applesauce and egg to the sugar and butter mixture, and beat until thoroughly combined.
  4. In a separate small bowl, combine flour, oats, baking soda, cinnamon, and salt.
  5. Gradually add the flour mixture to the sugar/butter mixture, beating until fully blended.
  6. Stir in raisins, walnuts, and vanilla extract until evenly distributed throughout the dough.
  7. Using a measuring tablespoon, drop 3 level tablespoons of dough onto the prepared cookie sheets, leaving about 2 inches of space between each cookie.
  8. Gently flatten each dough mound slightly with the back of a spoon or your fingers.
  9. Bake in the preheated oven at 350°F (175°C) for 10-15 minutes or until the cookies are golden brown around the edges.
  10. Remove from the oven and transfer the cookies to a wire rack to cool completely before serving.
