- 1 1/2 cups oatmeal
- 2 cups rolled oats
- 1/3 cup Splenda granular (or sugar)
- 2 tablespoons canola oil
- 1 egg
- 1/2 cup egg substitute
- 1 cup whole wheat flour
- 1 cup unbleached flour
- 1/2 teaspoon sea salt
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1 cup skim milk (for adjusting batter consistency)
Instructions:
- Moisten Oats: Pour boiling water over oats; stir to moisten.
- Mix Wet Ingredients: Add oil, egg, and 1 cup skim milk to the moistened oats. Stir well.
- Combine Dry Ingredients: In a separate bowl, mix together sea salt, whole wheat flour, unbleached flour, Splenda (or sugar), and baking powder.
- Blend: Add the dry ingredients mixture to the oatmeal mixture. Stir until well combined.
- Adjust Consistency: Gradually add enough remaining skim milk (between 3/4 to 1-1/4 cups) to make a medium thick batter for waffles or a thinner batter for pancakes. Adjust according to your preference.
- Cook Pancakes or Waffles:
- For Pancakes: Make 4-5 inch pancakes on a hot griddle. Let them brown a little, approximately 2-4 minutes on each side.
- For Waffles: Cook in a waffle iron according to the manufacturer’s instructions.
