Ingredients:

Quantity Ingredient
3 cups Whole wheat flour
1 cup Cornmeal
1/4 tsp Salt
1/2 cup Roasted sesame seeds
1 1/4 cups Brown rice
1 1/4 cups Warm water

Instructions:

  1. Combine dry ingredients: In a large mixing bowl, combine the whole wheat flour, cornmeal, salt, and roasted sesame seeds. Mix well.

  2. Add rice and water: Add the brown rice to the dry mixture and work it in with your hands. Create a well in the center of the mixture and pour in the warm water.

  3. Mix: Using a wooden spoon, mix the ingredients together until a moist bread dough forms. Add a little more water if needed to achieve the desired consistency.

  4. Knead: Transfer the dough onto a lightly floured surface and knead for about 15 minutes, or until the dough comes together. It will be sticky, so wet hands can help with the process.

  5. Prepare for fermentation: Prepare a well-oiled bowl. Place the kneaded dough in the bowl and turn it over twice to coat it with oil.

  6. Cover and ferment: Lightly oil a sheet of waxed paper and place it oiled side down on top of the dough. Cover the bowl with a damp towel. Allow the dough to ferment in a cool place for 13 to 15 hours in the summer, or 24 to 26 hours in winter, until it has doubled in size and become slightly bubbly.

  7. Shape and preheat: Once fermented, transfer the dough into an oiled loaf pan, making a dash down the center of the loaf with a sharp knife. Place the pan in a cold oven.

  8. Bake: Turn the oven heat to 200°F (93°C) and bake for 25 minutes. Afterward, raise the heat to 350°F (177°C) and continue baking for an additional 1 hour, or until the loaf is well browned and starts to pull away from the sides of the pan.

  9. Cool: Once baked, remove the bread from the oven and allow it to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

  10. Enjoy: Slice and serve this delicious Brown Rice Sesame Bread with your favorite spreads or alongside soups and salads for a wholesome meal option.
