Recipe Instructions:

  1. Heat water, yogurt, and vegetable oil to boiling. In a saucepan, combine the water, plain yogurt, and vegetable oil. Heat the mixture until it reaches a boil, then remove from heat.

  2. Stir in oats, wheat germ, and bran. Once the mixture has cooled to a very warm temperature (approximately 30 minutes), add in the oats, wheat germ, and bran. Mix well to combine.

  3. Set aside until cooled to very warm (about 30 minutes). Allow the mixture to cool to a very warm temperature, ensuring it’s not too hot to the touch.

  4. Meanwhile, combine 1 cup flour, sugar, yeast, and salt. In a large mixing bowl, combine 1 cup of flour, brown sugar, yeast, and salt. Mix until well combined.

  5. Stir in the cooled bran mixture, 1 egg, and enough remaining flour to make a soft dough. Add the cooled bran mixture and one egg to the dry ingredients. Gradually add in enough remaining flour to form a soft dough. Mix until the ingredients are fully incorporated.

  6. Knead until smooth, about 6-8 minutes. Turn the dough out onto a floured surface and knead it until it becomes smooth and elastic, about 6 to 8 minutes.

  7. Cover and let rest for 10 minutes. Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rest for 10 minutes.
