Instructions

Step 1: Fry the Edible Gum (Goond)

  1. Begin by heating 350 grams of ghee in a large, heavy-bottomed pan over low heat.
  2. Once the ghee has fully melted and is hot, gradually add the 150 grams of goond (edible gum), a little at a time.
  3. Fry the goond on low heat until it puffs up like popcorn and turns crisp. Ensure the goond is fully cooked, both inside and outside.
  4. Use a slotted spoon to remove the fried goond from the pan and set it aside to cool.

Step 2: Roast the Whole Wheat Flour

  1. In the same pan with the remaining ghee, add 400 grams of whole wheat flour.
  2. Roast the flour on low heat until it becomes aromatic and turns golden brown, stirring continuously to avoid burning.
  3. The flour mixture should turn crumbly in texture. Once done, turn off the heat and transfer the mixture to a large plate or bowl to cool slightly.

Step 3: Prepare the Mixture

  1. To the roasted wheat flour, add 400 grams of powdered sugar, 50 grams of grated dry coconut (kopra), 50 grams of chopped almonds, and 50 grams of chopped cashew nuts.
  2. Mix all the ingredients thoroughly, ensuring an even distribution of the sugar and dry fruits throughout the flour mixture.

Step 4: Crush the Goond

  1. Once the fried goond has cooled down, use a rolling pin to crush it into a coarse powder.
  2. Add the crushed goond to the wheat flour mixture and mix well.

Step 5: Shape the Ladoos

  1. Once the mixture has cooled enough to handle, take small portions of the mixture in your hands and shape them into round balls (ladoo). The size can vary according to your preference—small or large.
  2. Place the shaped ladoos on a tray and allow them to rest for a few hours. This will help the ladoos set properly and hold their shape.
