Instructions

Step 1: Prepare the Dough

  1. Begin by preparing the dough for the parathas. In a large bowl, combine the whole wheat flour, water, and 2 teaspoons of oil. Knead the mixture well until you form a soft, smooth dough.
  2. Once the dough is ready, cover it with a damp kitchen towel and let it rest for a few minutes while you prepare the stuffing.

Step 2: Prepare the Stuffing

  1. Mash the Peas: Take the peeled green peas and place them in a blender or mixer. Blend them into a thick paste. If the mixture is too thick, add a splash of water to achieve the desired consistency.
  2. Grate the Cauliflower: Wash the cauliflower thoroughly and grate it using a fine grater. Make sure you remove excess moisture from the cauliflower after grating.
  3. Cook the Stuffing: Heat some oil in a heavy-bottomed pan over medium heat. Add the cumin seeds and allow them to splutter. Next, add the chopped garlic and sauté for a few seconds until fragrant.
  4. Add the mashed peas, grated cauliflower, red chilli powder, and salt to the pan. Stir everything well and cook the mixture on low heat for 10 to 15 minutes. Keep stirring occasionally to avoid burning. The peas and cauliflower should become dry and slightly crispy. Avoid overcooking, as the stuffing should not become mushy. If the stuffing is too wet, it will be difficult to roll the parathas later.

Step 3: Assemble the Parathas

  1. Once the stuffing is cooked and has cooled down slightly, it’s time to assemble the parathas.
  2. Divide the dough into lemon-sized balls. Roll each ball into a small disc or puri shape.
  3. Place a tablespoon of the prepared matar and gobi stuffing in the center of the puri. Gently fold the edges of the puri to cover the stuffing completely, creating a ball again.
  4. Lightly flatten the stuffed dough ball and roll it out into a paratha, being careful not to let the stuffing spill out. If needed, dust with a little dry flour to prevent sticking.

Step 4: Cook the Parathas

  1. Heat a tava or skillet over medium-high heat. Once hot, place the rolled paratha onto the skillet and cook for about 1-2 minutes, until small bubbles start to form on the surface.
  2. Flip the paratha and drizzle a little oil or ghee around the edges. Flip again and cook the other side, pressing gently with a spatula to ensure even cooking. Both sides should be golden and slightly crispy.
  3. Repeat with the remaining dough and stuffing.
