Instructions

To Make the Yele Kadubu:

  1. In a large mixing bowl, combine the wheat flour, salt, and ghee. Add a little water at a time and knead into a smooth, soft dough.
  2. Once the dough is well-kneaded, cover it with a damp cloth and let it rest for about 10 minutes.
  3. After resting, take a small portion of the dough and roll it into a ball. Flatten it slightly, fold it in half, then fold it again to form a triangle shape. Repeat the process with the remaining dough.
  4. Grease the idli steamer or a similar steaming vessel with a little ghee or oil.
  5. Place the shaped dumplings (Kadubu) in the steamer, cover, and steam for about 8-10 minutes until fully cooked and soft. Alternatively, you can cook them in a traditional steamer using the steam method.

To Make the Sweet and Spicy Onion Chutney:

  1. Heat oil in a frying pan or kadhai. Add the red onions, fenugreek seeds, and dried red chilies. Sauté the mixture until the onions become soft and slightly caramelized.
  2. Once the onions are cooked, remove the mixture from the heat and allow it to cool down.
  3. Once cooled, transfer the mixture to a blender. Add the tamarind paste, jaggery powder, and salt. Blend everything together until it forms a smooth chutney.
  4. Taste the chutney and adjust the sweetness or saltiness as per your preference.
