Dahi Suran Ki Sabzi

Dahi Suran Ki Sabzi is a flavorful North Indian dish where yam (Suran) is cooked in a tangy yogurt gravy. This easy-to-make vegetarian dish is perfect for a wholesome lunch, paired with roti or rice.

Ingredients:

  • 300 grams yam, peeled and chopped
  • 3 tablespoons curd (yogurt)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon dried mango powder (amchur)
  • Salt, to taste
  • Oil, as needed
  • 2 sprigs coriander leaves, chopped (for garnish)

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Total Time: 40 minutes
Serves: 2-3

Instructions:

  1. Peel and chop the yam (suran) into small pieces.
  2. Place the chopped yam in a pressure cooker with enough water to cover it. Close the lid and cook for about 4 whistles. Once done, allow the pressure to release naturally.
  3. Heat oil in a pan. Add cumin seeds and let them splutter for about 10 seconds.
  4. Add the cooked yam to the pan and mix well.
  5. Sprinkle in turmeric powder, red chili powder, garam masala powder, and dried mango powder. Stir well to combine.
  6. Reduce the heat to low, add curd, and mix. Add a little water if necessary to adjust the consistency of the gravy.
  7. Let the sabzi simmer for 2-3 minutes and then turn off the heat.
  8. Garnish with fresh coriander leaves before serving.

Serve Dahi Suran Ki Sabzi with Panchmel Daal and Phulkas (Indian flatbread) for a delicious, hearty lunch.
