Dahi Suran Ki Sabzi

Ingredients:
- 300 grams yam, peeled and chopped
- 3 tablespoons curd (yogurt)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1 teaspoon dried mango powder (amchur)
- Salt, to taste
- Oil, as needed
- 2 sprigs coriander leaves, chopped (for garnish)

Instructions:
- Peel and chop the yam (suran) into small pieces.
- Place the chopped yam in a pressure cooker with enough water to cover it. Close the lid and cook for about 4 whistles. Once done, allow the pressure to release naturally.
- Heat oil in a pan. Add cumin seeds and let them splutter for about 10 seconds.
- Add the cooked yam to the pan and mix well.
- Sprinkle in turmeric powder, red chili powder, garam masala powder, and dried mango powder. Stir well to combine.
- Reduce the heat to low, add curd, and mix. Add a little water if necessary to adjust the consistency of the gravy.
- Let the sabzi simmer for 2-3 minutes and then turn off the heat.
- Garnish with fresh coriander leaves before serving.
