Zebra Corn Fried Rice

Ingredients:

  • 2 plates of cold cooked rice
  • 1 small sweet corn
  • 4 red shallots
  • 2 cloves of garlic
  • Fresh spring onions and celery, to taste
  • Salt and seasoning, to taste
  • 1 tablespoon oyster sauce

For the Zebra Egg:

  • 2 eggs
  • 1 tablespoon sweet soy sauce
  • Salt, to taste

Instructions:

  1. Prepare the Zebra Eggs:

    • First Egg: In a bowl, crack one egg and season with a pinch of salt. Beat well. Heat a non-stick frying pan and pour in the egg mixture, spreading it thinly to create a crepe-like layer. Cook until set, then transfer to a plate and set aside.
    • Second Egg: In the same bowl, crack the second egg and mix with sweet soy sauce. Pour into the pan and cook until set, forming another thin layer. Place this layer over the first cooked egg, roll them up together, and slice into strips. Set aside.
  2. Prepare the Fried Rice:

    • Heat a pan over medium heat and add a little oil. Sauté the red shallots and garlic until fragrant.
    • Add the sweet corn and a splash of water to cook the corn through.
    • Stir in the oyster sauce, salt, seasoning, and chopped celery and spring onions. Mix well.
    • Add the cold rice and stir-fry over low heat, ensuring the rice is evenly coated with the seasoning and well-heated. Taste and adjust seasoning if needed.
  3. Combine and Serve:

    • Gently fold the zebra egg strips into the fried rice, allowing them to warm through and mingle with the rice.
    • Serve hot and enjoy your delicious Zebra Corn Fried Rice!
