Zebra Cheesecake

Heavy Cream 300g
Icing Sugar 120g
Gelatin Sheets 14g
Heavy Cream (for gelatin) 20g

Instructions:

To create this delicious zebra cheesecake, start by preparing the base. Begin by placing the digestive biscuits in the bowl of a food processor. Process until the biscuits are finely crushed. Add the melted butter to the crushed biscuits and mix to combine. Press the mixture into the bottom of a cake pan using the back of a spoon to compact it.

Next, prepare the cheesecake filling: In a large bowl, pour in the Greek yogurt and add the icing sugar. Mix well to combine the ingredients. Gently fold in the whipped cream until the mixture is smooth.

Divide the mixture into two parts, one with approximately 250g and the other with 650g.

In the food processor, blend the blackberries until they turn into a smooth puree.

Now, heat 20g of heavy cream and divide it evenly between two small pots. Add 5g of softened and well-drained gelatin to one pot, and 9g of gelatin to the other. Stir the gelatin into the respective creams, ensuring it dissolves completely. Pour the cream with the 5g of gelatin into the lighter cheesecake mixture and the one with 9g into the blackberry mixture.

Carefully mix the cream with the gelatin into their respective bowls to create two distinct mixtures.

Now, take the pan with the biscuit base and begin layering the creams. Spoon two tablespoons of the lighter cream into the center of the pan. Spread it out gently with the back of a spoon. Next, add two tablespoons of the blackberry cream over the light cream. Continue alternating layers of the two mixtures, until the entire surface is covered.

Once all the layers are in place, refrigerate the cheesecake for 4 hours to allow it to set.

After the chilling time is complete, remove the cheesecake from the fridge and carefully take it out of the pan. For the final touch, decorate the top of your zebra cheesecake with fresh blackberries and mint leaves.
