Spicy Beef Lung Stir-Fry

Ingredients:

  • 1/2 kg beef lung, cut into cubes (or as preferred)

For the Spice Paste:

  • 2 large green chilies
  • 16 curly green chilies
  • 7 red bird’s eye chilies
  • 2 green tomatoes
  • 1 medium red tomato
  • 5 shallots
  • 6 cloves garlic
  • 1/2 teaspoon shrimp paste
  • Salt, to taste
  • Pepper, to taste
  • Granulated sugar, to taste

Instructions:

  1. Prepare the Beef Lung:

    • Begin by seasoning the cubed beef lung with salt and pepper. Mix well and gently squeeze to allow the seasonings to penetrate. Let it marinate for 10-15 minutes to absorb the flavors.
  2. Prepare the Spice Paste:

    • While the beef lung is marinating, prepare the spice paste. First, fry the chilies, tomatoes, shallots, and garlic until they are soft. Remove and drain them well.
    • Once cooled, grind the fried ingredients into a smooth paste using a mortar and pestle or a food processor.
  3. Fry the Beef Lung:

    • Heat oil in a pan and fry the marinated beef lung until it is crispy and cooked through. Remove from the pan and drain on paper towels.
  4. Cook the Spice Paste:

    • In the same pan, add a little more oil if needed, and sauté the spice paste until fragrant and the oil begins to separate from the paste.
  5. Combine and Season:

    • Add the fried beef lung to the spice paste. Stir well to ensure the beef lung is evenly coated with the paste.
    • Adjust seasoning with additional salt, pepper, and sugar to taste.
  6. Serve:

    • Once everything is well combined and heated through, transfer the dish to a serving platter. Serve hot and enjoy!
