Ingredients:
- 1/2 kg beef lung, cut into cubes (or as preferred)
For the Spice Paste:
- 2 large green chilies
- 16 curly green chilies
- 7 red bird’s eye chilies
- 2 green tomatoes
- 1 medium red tomato
- 5 shallots
- 6 cloves garlic
- 1/2 teaspoon shrimp paste
- Salt, to taste
- Pepper, to taste
- Granulated sugar, to taste

Prepare the Beef Lung:
- Begin by seasoning the cubed beef lung with salt and pepper. Mix well and gently squeeze to allow the seasonings to penetrate. Let it marinate for 10-15 minutes to absorb the flavors.

Prepare the Spice Paste:
- While the beef lung is marinating, prepare the spice paste. First, fry the chilies, tomatoes, shallots, and garlic until they are soft. Remove and drain them well.
- Once cooled, grind the fried ingredients into a smooth paste using a mortar and pestle or a food processor.

- Heat oil in a pan and fry the marinated beef lung until it is crispy and cooked through. Remove from the pan and drain on paper towels.

- Adjust seasoning with additional salt, pepper, and sugar to taste.
