Instructions:

Prepare Sun-Dried Tomatoes:
- Put the sun-dried tomatoes in hot water to rehydrate for about 1 hour. Alternatively, you can use the ones packed in oil.

Blanch Broccoli:
- Bring a large pot of salted water to a boil.
- Add the broccoli florets and boil for 2 minutes.
- Quickly drain the broccoli and immediately plunge it into a bowl of ice water to stop the cooking process.
- Once cooled, drain the broccoli thoroughly and pat dry with a kitchen towel.

Assemble the Salad:
- In a large mixing bowl, combine the blanched broccoli, thinly sliced red onions, sliced jalapeno-stuffed green olives, and rehydrated (or oil-packed) sun-dried tomatoes.

Prepare Dressing:
- In a separate small bowl, whisk together the minced garlic, extra virgin olive oil, red wine vinegar, chopped fresh parsley, and salt to taste.
