Instructions

  1. Prepare the Carrots: Start by washing and peeling the carrots. Place them in a pressure cooker with 2 tablespoons of water and salt to taste. Pressure cook for 2 whistles, then release the pressure immediately and set aside.

  2. Cook the Tempering: In a preheated pan, add sesame oil. Once hot, toss in the mustard seeds, cumin seeds, and urad dal. Allow them to crackle and the dal to turn golden brown.

  3. Add Aromatics: Once the dal is browned, add the roughly torn curry leaves, asafoetida, and slit green chillies. Sauté for a few seconds to release their flavors.

  4. Sauté the Capsicum: Add the chopped capsicum and salt. Stir-fry for a few moments, then cover and cook over medium heat until the capsicum is tender. Stir occasionally to prevent burning.

  5. Combine and Serve: Once the capsicum is cooked, add the previously prepared carrots and stir on high heat for about a minute. Mix in the grated coconut thoroughly and turn off the heat.

  6. Serve: Transfer the Carrot Capsicum Poriyal to a serving bowl and enjoy it hot. For a complete meal, pair it with Manga Rasam, steamed rice, and Elai Vadam.

This Carrot Capsicum Poriyal not only enhances the flavor of your meal but also offers a colorful presentation, making it an ultimate choice for any dining occasion. Enjoy the journey of flavors!
