  • 2 minced garlic cloves
  • 2 tomatoes
  • 1 onion
  • 2 mild green chilies
  • 2 tsp oregano
  • 1/2 cup water
  • 1 cup grated Monterey Jack cheese
  • 1/2 cup sour cream
  • 3 tbsp shortening or oil
  • 2 large cooked chicken breasts, cubed
  • 2 tortillas

Instructions:

Step Description
1 Set oven to 325 degrees Fahrenheit.
2 In a skillet, sauté the minced garlic in oil until tender.
3 Add tomatoes to the skillet, breaking them up with a fork. Then add chopped onions, mild green chilies, garlic salt, oregano, and 1/2 cup of water. Cook over low heat until the mixture thickens.
4 In a mixing bowl, combine the cubed cooked chicken, grated Monterey Jack cheese, and sour cream. Mix well.
5 In a separate frypan, heat shortening or oil.
6 Dip the tortillas in the hot oil, just enough to make them soft and pliable. Drain excess oil.
7 Fill the tortillas with the chicken mixture, then roll them up.
8 Place the rolled tortillas in a baking dish, seam side down.
9 Spoon the tomato mixture over the top of the rolled tortillas.
10 Bake in the preheated oven for 15 minutes, or until heated through.
