Description: This Cranberry Orange Loaf is a delightful sweet and tangy holiday cake perfect for Christmas or any festive occasion. It’s a versatile treat that can be made weeks in advance, allowing the flavors to develop beautifully. Whether enjoyed fresh out of the oven or gifted to loved ones, this loaf is sure to be a hit!

  • Cook Time: 35 minutes
  • Prep Time: 15 minutes
  • Total Time: 50 minutes
  • Yield: 2 loaf pans

Ingredients:

Ingredients Quantity
Flour 2 1/4 cups
Sugar 1 cup
Baking powder 1 tbsp
Dates 1 1/2 cups
Walnuts 1 cup
Cranberries 2 cups
Oranges, zest of 2 oranges
Eggs 2
Canola oil 2/3 cup
Buttermilk 1 cup
Sugar (for topping) 1 cup

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Prepare Dry Ingredients: In a large mixing bowl (let’s call it Bowl #1), sift together the flour, sugar, baking powder, chopped dates, walnuts, cranberries, and zest of 2 oranges. Set aside.

  3. Prepare Wet Ingredients: In another mixing bowl (Bowl #2), beat the eggs, canola oil, and buttermilk until well combined.

  4. Combine Ingredients: Add the wet ingredients from Bowl #2 into the dry ingredients in Bowl #1. Stir until just combined. Be careful not to overmix.

  5. Bake Loaves: Pour the batter into two well-greased loaf pans (each about 7-1/2″ x 3″). Smooth the tops with a spatula.

  6. Bake in the preheated oven for about 35 minutes, or until a cake tester inserted into the center comes out clean.

  7. Cool: Allow the loaves to cool in the pans for a few minutes, then transfer them to a wire rack to cool completely.

  8. Prepare Topping: In a small saucepan, mix together the juice of the oranges and 1 cup of sugar. Heat gently until the sugar has dissolved, then remove from heat.

  9. Finish: Pour the orange syrup over the cooled loaves, allowing it to soak in. This adds extra moisture and flavor.

  10. Storage: These Cranberry Orange Loaves keep very well in the refrigerator for up to 2 weeks. Wrap them tightly in plastic wrap and store them upside down and right-side up to distribute the moisture evenly.
