Description:

Discover the vibrant flavors of East African cuisine with this delightful Tomato Chutney. Bursting with the freshness of cherry and grape tomatoes, fragrant herbs, and a zesty hint of lemon, this chutney is a versatile condiment that pairs perfectly with grilled meats, curries, or as a topping for baked potatoes. It’s particularly refreshing when made with garden-fresh tomatoes during the summer months.

Ingredients:

  • 2 cups cherry tomatoes, halved
  • 1/2 cup grape tomatoes, halved
  • 1 green onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 1 jalapeño pepper, finely chopped (adjust according to heat preference)
  • 2 tablespoons fresh lemon juice
  • 1/2 – 1 teaspoon salt (adjust to taste)

Instructions:

  1. Prepare the Tomatoes:

    • In a saucepan, add halved cherry and grape tomatoes along with about 2 tablespoons of water.
  2. Cook the Tomatoes:

    • Bring the tomatoes to a boil, then reduce the heat and let them simmer until they are softened and slightly broken up, which takes about 10 to 15 minutes.
  3. Add Remaining Ingredients:

    • Remove the saucepan from heat. Stir in the chopped green onion, cilantro, parsley, jalapeño pepper (adjust amount to your spice preference), fresh lemon juice, and salt.
  4. Let Flavors Blend:

    • Allow the chutney to sit for about an hour to let the flavors meld together. It’s best served at room temperature.
  5. Serve:

    • Enjoy this East African Tomato Chutney as a flavorful accompaniment to grilled dishes, curries, or as a versatile topping for pasta or baked potatoes.

This chutney not only enhances the taste of your dishes but also adds a burst of freshness and savory notes that will elevate any meal, making it perfect for any occasion, especially during the summer months when tomatoes are at their peak. 🍅
