Instructions:

  1. Prepare the Farro:
    Begin by rinsing the pearl farro under cold running water. Drain it in a fine mesh sieve, ensuring to save the cooking water. Once rinsed, let the farro cool completely.

  2. Cook the Green Beans:
    While the farro is cooling, wash and trim the green beans. Cook them in the same water you used for the farro. Boil the beans for 7-8 minutes, then drain and rinse under cold water to stop the cooking process. Set aside to cool.

  3. Prepare the Shrimp:
    Peel the shrimp by removing the legs and shell, then use a knife to extract the dark intestinal vein along the back. After cleaning, you should have approximately 250 grams of shrimp. Cut them in half lengthwise, then season with the grated lime zest and juice. Add salt and black pepper to taste, and mix well to allow the flavors to meld.

  4. Cook the Shrimp:
    Heat a pan over medium-high heat. Add the shrimp and sauté for 2-3 minutes, or until they turn pink and are fully cooked. Set aside to cool.

  5. Toast the Pumpkin Seeds:
    In a separate pan, toast the pumpkin seeds for about 2 minutes over medium heat. Stir them frequently to prevent burning. Once they’re lightly browned and fragrant, remove from heat and set aside.

  6. Assemble the Salad:
    In a large mixing bowl, combine the cooled farro, green beans, halved yellow cherry tomatoes, and the sautéed shrimp. Drizzle with extra virgin olive oil and toss everything together gently.

  7. Season and Serve:
    Taste the salad and adjust seasoning if needed, adding more salt, pepper, or lime juice to suit your preferences. Finally, sprinkle the toasted pumpkin seeds over the top for a delightful crunch.
