Zesty Ginger Beef Stir-Fry with Crispy Garlic and Bok Choy

Ginger Shakin’ Beef

Ingredients:

  • 140 grams tenderloin beef
  • 1 thumb-sized piece of ginger
  • 2 spicy bird’s eye chilies
  • 2 cloves of garlic
  • 5 peppercorns
  • A pinch of coriander seeds
  • 2 candlenuts
  • 1 tablespoon margarine
  • 1 tablespoon honey
  • 2 tablespoons cooking oil
  • Juice of 1 lime
  • 2 heads of bok choy

Steps:

  1. Prepare the Spice Paste:

    • Grind the coriander seeds, peppercorns, 1 clove of garlic, and candlenuts into a fine paste.
    • Mix the ground spice paste with margarine.
  2. Marinate the Beef:

    • Slice the tenderloin beef into thin strips.
    • Rub the beef slices with the spice paste and margarine mixture.
    • Let the beef marinate for 10 minutes. Note: Since margarine contains salt, you may not need additional salt. Adjust to taste if needed.
  3. Prepare the Aromatics:

    • Julienne the ginger and remaining garlic clove.
    • Thinly slice the bird’s eye chilies.
  4. Blanch the Bok Choy:

    • Bring a pot of water to a boil, adding a pinch of salt.
    • Add the cleaned bok choy and blanch for 2 minutes.
    • Remove the bok choy from the water and drain well.
  5. Crisp the Aromatics:

    • Heat 2 tablespoons of cooking oil in a pan.
    • Fry the julienned ginger, sliced garlic, and chilies until they become crispy and golden brown.
    • Remove the aromatics from the oil and set aside.
  6. Cook the Beef:

    • In the same pan with the remaining oil, cook the marinated beef strips. Fry each side for about 3 minutes until the beef is browned.
    • Once the beef is browned, add the honey and lime juice. Stir well to coat the beef evenly.
  7. Assemble the Dish:

    • Arrange the blanched bok choy on a serving plate.
    • Place the cooked beef on top of the bok choy.
    • Sprinkle the crispy fried ginger, garlic, and chilies over the beef.
