Instructions

  1. Prepare the Rice:

    • Begin by washing the basmati rice thoroughly under running water until the water runs clear. Once washed, soak the rice for about 30 minutes.
    • In a large pot, bring 3.5 cups of water to a boil. Drain the soaked rice and add it to the boiling water. Season with salt to taste, cover with a lid, and cook on a low flame for 20 minutes.
    • Once the rice is cooked, remove it from heat and let it rest for 10 minutes. Fluff the rice gently using a fork to prevent it from becoming sticky or lumpy. Set the rice aside.
  2. Sauté the Vegetables:

    • Heat a kadai (or a deep pan) over medium heat. Add the butter along with a teaspoon of oil to prevent the butter from burning.
    • Add the finely chopped yellow, red, and green bell peppers along with the chopped green chillies. Sauté the mixture for about 2 minutes until the bell peppers soften slightly but still retain a bit of crunch.
  3. Add Ginger and Rice:

    • Stir in the grated ginger and sauté for an additional minute until its aroma fills the kitchen.
    • Now, add 2 cups of the cooked basmati rice to the kadai. Season with a little more salt, if necessary, and gently toss the rice and vegetables together, making sure everything is well combined.
  4. Garnish and Serve:

    • Garnish the rice with a sprinkle of toasted black and white sesame seeds for an extra crunch and nutty flavor.
    • Turn off the heat and the Crunchy Ginger Capsicum Rice is ready to serve.
