Grilled Gurame Fish with Sambal Matah

Ingredients

Gurame fish, cleaned 2 pieces
Salt to taste
Pepper to taste
Lime juice to taste (for marinating)
Shallots, thinly sliced 8-9 cloves
Lemongrass, thinly sliced 1 stalk
Bird’s eye chilies, thinly sliced 8-9 pieces
Shrimp paste ½ sachet
Cooking oil as needed
Flavor enhancer to taste
Lime ½ piece

Instructions

  1. Marinate the Fish: Rub the cleaned gurame fish with salt, pepper, and lime juice. Allow it to marinate for 15 minutes to absorb the flavors.

  2. Prepare the Sambal Matah: While the fish marinates, thinly slice the shallots, lemongrass, and bird’s eye chilies. In a small pan, heat a bit of oil over low heat. Add the shrimp paste, stirring until well combined. Pour the heated oil over the sliced ingredients, mixing in a pinch of salt and a flavor enhancer to taste. Your sambal is now ready.

  3. Cook the Fish: Grill the marinated fish until cooked through, or fry if preferred. Once done, remove from heat.

  4. Serve: Serve the grilled gurame fish hot, accompanied by the refreshing sambal matah, and enjoy this delightful combination!
