Grilled Gurame Fish with Sambal Matah

| Shrimp paste | ½ sachet |

| Flavor enhancer | to taste |

Marinate the Fish: Rub the cleaned gurame fish with salt, pepper, and lime juice. Allow it to marinate for 15 minutes to absorb the flavors.

Prepare the Sambal Matah: While the fish marinates, thinly slice the shallots, lemongrass, and bird’s eye chilies. In a small pan, heat a bit of oil over low heat. Add the shrimp paste, stirring until well combined. Pour the heated oil over the sliced ingredients, mixing in a pinch of salt and a flavor enhancer to taste. Your sambal is now ready.
