Grilled Zucchini-Wrapped Shrimp Recipe 🍤

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Total Time: 30 minutes
Servings: 6 appetizer servings

Description:

Indulge in a healthier twist to classic barbecued shrimp by ditching the fatty bacon and wrapping succulent shrimp with zucchini ribbons. Marinated in a zesty lime juice blend, these grilled delights are bursting with flavor, while the zucchini ensures they stay moist and tender. Elevate the taste by infusing a hint of smokiness with liquid smoke, creating a dish that’s perfect for brunch or any occasion. This recipe, sourced from Southern Living Magazine, is not only delicious but also low in carbs, making it a guilt-free delight.

Ingredients:

  • 1 pound large shrimp
  • 1/2 cup fresh lime juice
  • 8 cloves garlic
  • 2 teaspoons salt
  • 3/4 pound zucchini
  • 1/2 cup fresh cilantro stems, chopped
  • 7 tablespoons vegetable oil, divided

Instructions:

Step Description
1 Prepare Shrimp: Peel and devein the shrimp. In a heavy-duty zip-top plastic bag, combine the lime juice, 3 tablespoons of vegetable oil, minced garlic, and salt. Gently squeeze the bag to blend the marinade, then add the shrimp. Seal the bag and chill the mixture for 15 minutes.
2 Prepare Marinade: Remove the shrimp from the marinade, but don’t discard the marinade. Bring the reserved marinade to a boil in a small saucepan, then remove it from the heat.
3 Prepare Zucchini: Using a vegetable peeler, cut the zucchini lengthwise into thin ‘ribbons’.
4 Wrap Shrimp: Wrap each shrimp with a zucchini ribbon and secure it with a wooden pick.
5 Preheat Grill: Preheat your grill to medium-high heat (350° to 400°).
6 Brush with Oil: Brush the zucchini-wrapped shrimp with the remaining 5 tablespoons of vegetable oil.
7 Grill Shrimp: Grill the shrimp without the grill lid for about 4 minutes.
8 Brush with Marinade: Brush the shrimp with the reserved marinade, then turn them and brush again.
9 Finish Grilling: Grill for an additional 2 minutes or until the shrimp turn pink and are cooked through.
10 Serve: Serve the grilled zucchini-wrapped shrimp hot or at room temperature on a cilantro-lined platter, if desired. Enjoy your flavorful and healthy appetizer!
