To prepare this refreshing ceviche, start by prepping your ingredients. Begin by finely chopping the fresh coriander. Clean the red onions by peeling them and then slice them into thin rings.
Next, take the grouper and mackerel fillets, ensuring to remove any skin and bones. Using a pair of tweezers, gently pull out any remaining bones to ensure your fillets are completely bone-free. Once cleaned, cut the fish fillets into small, evenly sized cubes.
Arrange the fish pieces in a shallow dish, ensuring they are not overlapping too much to allow even marination. Add the thinly sliced red onions on top of the fish, followed by the zest of two limes.
