Instructions

  1. Prepare the Rice
Begin by ensuring your rice is already cooked and ready to go. If you need a guide on how to cook rice in a pressure cooker, refer to our detailed recipe.

  2. Grind the Coriander
Rinse the coriander leaves thoroughly and place them in a mixer or food processor. Grind them into a coarse paste and set aside.

  3. Sauté Aromatics
Heat a kadai (wok) over medium heat and add some oil. Once hot, toss in the chopped ginger and garlic, sautéing them until they become soft and aromatic.

  4. Cook the Onion
Add the chopped onion to the kadai and cook until it turns translucent and soft, about 3-4 minutes.

  5. Add Jalapeños and Rice
When the onion reaches a light brown color, stir in the sliced pickled jalapeños and give it a quick mix. Next, add the cooked rice, making sure it’s evenly distributed in the pan.

  6. Season the Rice
Sprinkle in the dried thyme, oregano, red chili flakes, and the freshly ground coriander paste. Add salt to taste and mix well to ensure the rice is coated with all the spices and herbs.

  7. Toss and Finish
Continue tossing the rice until it turns a vibrant green, absorbing the coriander flavor. Squeeze in the juice of the lemon, giving the dish a fresh tang. Taste and adjust the seasoning if needed.

  8. Serve
Once done, remove from heat and transfer the Jalapeno Cilantro Lime Rice to a serving bowl. Serve hot alongside a main dish, like Jamaican Stew or Delicious Herbed Hasselback Potatoes, and enjoy a complete and flavorful continental meal.

This Jalapeno Cilantro Lime Rice is a fantastic way to add a pop of color and flavor to any dinner. Pair it with your favorite curries or grilled meats for a well-rounded, delicious meal.
