Frozen Lemon Dessert 🍋
Description: An excellent dessert to have in your freezer for unexpected company. Light and refreshing, this frozen lemon dessert has been enhanced with tweaks, including using more crumbs for the bottom layer and adding zesty lemon zest for an extra burst of flavor.

Ingredients:
- 3/4 cup margarine
- 1/4 cup butter
- 3/4 cup white sugar
- 2 eggs, separated
- 1/3 cup lemon juice
- 1 tablespoon lemon zest (optional)
- 1 1/4 cups whipping cream
Instructions:
Step | Description |

1 | Lightly grease an 8″ pan. |
2 | Melt butter and add graham wafer crumbs. Mix well and press most of the crumbs into the bottom of the pan, reserving a couple of tablespoons for later. |
3 | In a saucepan, combine 1/2 cup of sugar, 2 egg yolks, and lemon juice. Cook over medium heat, stirring constantly until thickened. Optionally, add a tablespoon of lemon zest for extra flavor. Cool the mixture. |
4 | Beat 2 egg whites until stiff peaks form. Gradually add 1/4 cup of sugar and continue beating until stiff. |
5 | Fold the meringue into the cooled custard along with the whipped whipping cream. |
6 | Turn the mixture into the prepared pan. |
7 | Sprinkle the reserved crumbs on top and freeze until firm. |
8 | Serve frozen. This delightful dessert keeps well in the freezer for future enjoyment. |
