- 275g caster sugar
- 2 gelatin leaves
- 4 cups of green seedless grapes
- 25g caster sugar

- Warm the mixture gently until the sugar dissolves completely.
- Continue heating for an additional 2-3 minutes.
- Remove the pan from heat and sprinkle gelatin over the mixture.
- Let it sit for 2-3 minutes until the gelatin becomes spongy.
- Return the pan to very low heat and warm for another 2-3 minutes until the gelatin melts, ensuring it doesn’t boil.
- Strain the mixture through a nylon sieve, then through muslin for an exceptionally clear jelly.
- Allow the jelly to cool, stirring occasionally, then pour it into the prepared jelly moulds.
