Instructions:
-
Make the Base:
- Preheat the oven to 350°F (175°C). Spray a 10-inch springform pan with nonstick cooking spray and set it aside.
- In a saucepan over low heat, melt the chocolate and butter together, stirring frequently.
- Remove from heat and stir in the sugar, followed by the eggs, flour, and baking powder. Mix until smooth.
- Spread the batter into the prepared springform pan and bake for 20 to 25 minutes, or until just set. It’s perfect when a toothpick inserted into the center comes out clean.
- Allow the base to cool in the pan.
-
Make the Mousse:
- In a small saucepan, stir together the gelatin, 1/2 cup of sugar, 4 egg yolks, and freshly squeezed lime juice.
- Cook over medium heat, whisking constantly, until slightly thickened, about 4 to 5 minutes. It thickens further upon cooling, so remove it from heat just as it starts to thicken.
- Stir in the lime zest.
- Transfer the mixture to a bowl and refrigerate until it starts to set, approximately 15 minutes.
- Meanwhile, beat the reserved egg whites and the remaining 1/2 cup of sugar until stiff peaks form.
- In another bowl, beat the whipping cream until stiff.
- Gently fold the whipped cream into the gelatin mixture, then fold this mixture into the stiffly beaten egg whites, ensuring thorough but gentle folding.
- Spread the lime mousse over the cooled base.
- Cover and refrigerate for several hours or overnight until set.
-
Serve:
- Place the dessert on a round serving platter.
- Run a knife around the pan between the mousse and the pan to ensure it’s not sticking, then remove the sides of the springform pan.
- Garnish as desired; raw lime slices or rosettes of stiffly beaten whipped cream make excellent decorations.
- Enjoy your Lime Mousse Brownie Dessert, a tantalizing treat for any occasion!
-
Variation:
- Lemon lovers can replace the lime juice and zest with freshly squeezed lemon juice and lemon zest for a delightful twist on this recipe.
