Lime Ceviche Recipe 🍤🥑🍋

Description: If you haven’t had ceviche, you are in for a real treat. You can make this with shrimp, fish, or scallops. Be aware that the seafood is not cooked in the traditional way, but is “cooked” in the lime juice mixture. There is a chemical process that occurs when the acid of the citrus comes in contact with the fish is similar what happens when the fish is cooked, and the flesh becomes opaque and firm. This ceviche is fresh and delicious!! Enjoy!

Ingredients:

  • 1/4 cup lime juice
  • 1 jalapeño, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon extra virgin olive oil
  • 1 scallion, thinly sliced
  • 1 cucumber, peeled, seeded, and diced
  • 3 tablespoons fresh mint leaves, chopped
  • 1 tablespoon fresh cilantro leaves, chopped
  • 1 avocado, diced
  • Salt and pepper, to taste

Instructions:

  1. In a nonreactive bowl, combine lime juice, minced jalapeño, grated ginger, and extra virgin olive oil.
  2. Add shrimp, fish, or scallops to the bowl, and toss until evenly coated with the lime juice mixture.
  3. Cover the bowl with plastic wrap and chill in the refrigerator until the flesh of the seafood is opaque, approximately 1 hour. You can also leave it overnight for more intense flavors, stirring occasionally.
  4. Once the seafood is “cooked” in the lime juice mixture, add the thinly sliced scallion, diced cucumber, chopped fresh mint leaves, chopped fresh cilantro leaves, and diced avocado to the bowl.
  5. Season the ceviche with salt and pepper according to your taste preferences.
  6. Toss all the ingredients together until well combined.
  7. Serve the lime ceviche immediately, garnished with additional fresh herbs or avocado slices if desired.
