Ingredients:

  • 1 boneless beef top round steak
  • 8 flour tortillas
  • 2 lime wedges
  • Fresh cilantro stems
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves
  • 2 chopped tomatoes
  • 1 zucchini
  • 1/2 cup fresh cilantro
  • 1/4 cup salsa
  • 1/4 cup fresh lime juice

Instructions:

  1. Marinate the Steak:

    • Place the beef steak in a plastic bag.
    • Add the marinade ingredients: lime juice, minced garlic, and fresh cilantro stems. Coat the steak evenly by turning it inside the bag.
    • Seal the bag securely and refrigerate for 20 to 30 minutes, turning the bag once halfway through.
  2. Prepare the Tortillas:

    • Wrap the flour tortillas securely in heavy-duty aluminum foil, ready for grilling.
  3. Make the Pico de Gallo:

    • In a medium bowl, combine chopped tomatoes, diced zucchini, fresh cilantro leaves, salsa, and fresh lime juice. Mix well to ensure all flavors blend harmoniously.
  4. Grill the Steak and Tortillas:

    • Preheat your grill to medium heat, ensuring the coals are evenly spread.
    • Remove the steak from the marinade, discarding any excess marinade.
    • Place the steak on the grill grid over the coals, leaving it uncovered.
    • Grill the steak for 8 to 9 minutes for medium-rare to medium doneness, turning it occasionally for even cooking.
    • During the last 5 minutes of grilling, place the packet of wrapped tortillas on the outer edge of the grill grid. Turn them occasionally to warm them through.
  5. Slice and Serve:

    • Once the steak is cooked to your desired doneness, remove it from the grill and let it rest for a few minutes.
    • Trim any excess fat from the steak, then carve it crosswise into very thin slices for maximum tenderness.
    • Serve the grilled steak slices in warm flour tortillas, topped generously with the prepared Pico de Gallo.
