- 6 oranges
- 1/2 cup caster sugar
- 1 vanilla bean
- 2 1/2 tablespoons liqueur
- 1 1/2 tablespoons brandy
Instructions:

1 | Using a zester, remove the rind of 2 oranges. If you don’t have a zester, use a vegetable peeler, then cut into fine strips. |
2 | Place these orange strips in a saucepan and cover with cold water. |
3 | Bring the water to a boil, and cook the orange strips until slightly softened. |
4 | Drain the softened orange strips, then return them to the saucepan along with the caster sugar, vanilla bean (split lengthways), and 125ml water. |
5 | Simmer the mixture very gently until the orange strips become transparent. |
6 | Meanwhile, peel all the oranges, ensuring to remove ALL the pith, then carefully segment them. |
7 | Place the segmented oranges in a serving bowl. |
8 | Remove the vanilla bean from the syrup, which will now be rather thick. |
9 | Add the liqueur and brandy to the syrup, then stir well. |
10 | Pour the syrup mixture over the segmented oranges. |
11 | Cover the bowl and chill the liqueur oranges well in the refrigerator. |
12 | Serve the chilled liqueur oranges in glasses, accompanied by an extra thick cream for an indulgent touch. |
