Ingredients:

  • 6 oranges
  • 1/2 cup caster sugar
  • 1 vanilla bean
  • 2 1/2 tablespoons liqueur
  • 1 1/2 tablespoons brandy

Instructions:

Step Description
1 Using a zester, remove the rind of 2 oranges. If you don’t have a zester, use a vegetable peeler, then cut into fine strips.
2 Place these orange strips in a saucepan and cover with cold water.
3 Bring the water to a boil, and cook the orange strips until slightly softened.
4 Drain the softened orange strips, then return them to the saucepan along with the caster sugar, vanilla bean (split lengthways), and 125ml water.
5 Simmer the mixture very gently until the orange strips become transparent.
6 Meanwhile, peel all the oranges, ensuring to remove ALL the pith, then carefully segment them.
7 Place the segmented oranges in a serving bowl.
8 Remove the vanilla bean from the syrup, which will now be rather thick.
9 Add the liqueur and brandy to the syrup, then stir well.
10 Pour the syrup mixture over the segmented oranges.
11 Cover the bowl and chill the liqueur oranges well in the refrigerator.
12 Serve the chilled liqueur oranges in glasses, accompanied by an extra thick cream for an indulgent touch.
