Ingredients:

  • 1/4 cup sliced almonds
  • 2 cups lettuce, washed and dried
  • 1 mandarin orange, peeled and segmented
  • 1 mushroom, thinly sliced
  • 1/2 teaspoon sugar
  • 1 teaspoon fresh tarragon leaves
  • 1/2 teaspoon Tabasco sauce
  • 1/3 cup chopped green onions

Dressing:

  • 1/8 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. Toast Almonds: In a skillet over low heat, toast the sliced almonds, shaking constantly, until golden brown, about 5 minutes. Be careful not to burn them. Once toasted, set aside to cool.

  2. Prepare Lettuce: Wash and dry the lettuce thoroughly. Tear it into bite-sized pieces and place them in a large salad bowl.

  3. Add Ingredients: Add the sliced mushrooms, mandarin orange segments, chopped green onions, and cooled toasted almonds to the bowl with the lettuce.

  4. Make Dressing: In a small bowl, combine the olive oil, Dijon mustard, minced garlic, red wine vinegar, sugar, tarragon leaves, Tabasco sauce, salt, and pepper. Whisk together until well blended.

  5. Toss Salad: Just before serving, drizzle the dressing over the salad and toss well to coat evenly.
