Ingredients:

  • 1/4 cup fresh lemon juice
  • 1/4 cup red wine vinegar

  • 1/4 teaspoon black pepper
  • 1/2 cup diced parsnip
  • 1/2 cup diced carrot
  • 6 cups boiling water
  • 1 1/2 cups dried lentils
  • 1/2 cup diced celery
  • 1/3 cup chopped green onion
  • 3 tablespoons fresh parsley

Instructions:

  1. Prepare the Vinaigrette:

    • In a small bowl, combine the fresh lemon juice, red wine vinegar, olive oil, salt, sugar, and black pepper.
    • Stir the ingredients together using a whisk until well combined. Set aside for later use.
  2. Cook the Vegetables:

    • In a pot, bring 6 cups of water to a boil.
    • Add the diced parsnip and carrot to the boiling water and cook for about 1 minute or until tender.
    • Using a slotted spoon, remove the cooked vegetables from the pot and set them aside.

    • In the same pot of boiling water, add the dried lentils.
