Instructions

  1. Preparation of Ingredients:
    Begin by thoroughly washing the radish and its greens. Chop them into bite-sized pieces, ensuring they are ready for cooking.

  2. Heating the Oil:
    In a kadai (wok), heat the mustard oil over medium flame until it is hot but not smoking.

  3. Tempering Spices:
    Add the mustard seeds to the hot oil and allow them to crackle. Once they begin to splutter, add the carom seeds, asafoetida, turmeric powder, and slit green chilies. Sauté for a minute until the spices release their aroma.

  4. Cooking the Radish:
    Add the chopped radish and radish greens to the tempered spices in the kadai. Stir well to combine all the ingredients.

  5. Adding Salt:
    Sprinkle salt according to your taste, and continue cooking until the radish releases its moisture, which should take about 5-7 minutes.

  6. Cover and Cook:
    Cover the kadai with a lid and cook on low heat, allowing the water from the radish to evaporate completely, which should take about 10 minutes.

  7. Finishing Touches:
    Once the water has evaporated, add the dry mango powder (amchur) to the bhurji. Mix well to incorporate all flavors, and cook for an additional 2 minutes.

  8. Serving:
    Serve the Mooli Bhurji hot, ideally with a side of spinach dal, boondi raita, and soft phulkas for a satisfying meal.
