Ingredients:

For the Marinade:

  • 2 cups buttermilk 🥛
  • 1/4 cup mustard 🌶️
  • 3-4 garlic cloves, minced 🧄
  • 2 tbsp low sodium soy sauce 🥡
  • 2 tbsp extra virgin olive oil 🫒
  • 2 tsp paprika 🌶️
  • 1/4 tsp cayenne pepper 🌶️
  • 1/2 tsp dried marjoram 🌿

For the Mustard Sauce:

  • 2 cups plain low-fat yogurt 🥣
  • 1/4 cup red wine vinegar 🍷
  • 1 1/4 tbsp Dijon mustard 🌶️
  • 1/4 cup parmesan cheese, grated 🧀
  • 2 tbsp extra virgin olive oil 🫒
  • 1 garlic clove, minced 🧄
  • 1 tsp dried marjoram 🌿
  • Salt, to taste 🧂
  • 1/4 tsp cayenne pepper 🌶️
  • Fresh parsley, for garnish 🌿

Instructions:

  1. Marinating the Steak:

    • In a large, shallow non-metal dish, combine the buttermilk, mustard, minced garlic cloves, low sodium soy sauce, extra virgin olive oil, paprika, cayenne pepper, and dried marjoram. Stir well to ensure the ingredients are fully incorporated.
    • Add the flank steaks to the marinade, turning them to coat evenly. If preferred, you can marinate the steaks in a zip-lock bag, ensuring to remove excess air before sealing tightly. Turn the bag occasionally to ensure even marination.
    • Cover the dish or seal the zip-lock bag, then refrigerate for at least 2 hours or overnight, allowing the flavors to meld together. Turning the steaks occasionally during the marinating process will ensure they are evenly flavored.
  2. Cooking the Steak:

    • After marinating, remove the steaks from the marinade and discard any excess marinade.
    • Preheat your broiler or grill to medium-high heat. If using a broiler, position the oven rack about 5 inches from the heat source.
    • Place the steaks on a rack coated with vegetable spray and place the rack in a roasting pan to catch any drippings.
    • Broil the steaks for approximately 4 minutes on each side, or until they reach your desired level of doneness. Alternatively, you can barbecue the steaks to your liking, adjusting the cooking time accordingly.
    • Once cooked to perfection, remove the steaks from the heat and allow them to rest for a few minutes before slicing.
  3. Preparing the Mustard Sauce:

    • In a small bowl, combine the plain low-fat yogurt, red wine vinegar, Dijon mustard, grated parmesan cheese, extra virgin olive oil, minced garlic clove, dried marjoram, salt, and cayenne pepper. Stir well to blend all the ingredients together.
    • Cover the bowl and chill the mustard sauce thoroughly in the refrigerator until ready to serve.
  4. Serving:

    • To serve, slice the cooked steak diagonally across the grain into thin slices. This helps to ensure tenderness.
    • Arrange the sliced steak on a serving platter and drizzle with the chilled mustard sauce.
    • Garnish with fresh parsley leaves for a pop of color and added flavor, if desired.
    • Serve the Marinated Flank Steak with Mustard Sauce chilled or at room temperature, alongside warm corn muffins or bread and your favorite salads.

Tips:

  • For added flavor, you can add a splash of Worcestershire sauce or balsamic vinegar to the marinade.
  • Make sure to allow the steak to come to room temperature for about 30 minutes before cooking to ensure even cooking.
  • For a spicier kick, adjust the amount of cayenne pepper in both the marinade and mustard sauce according to your taste preferences.
  • Leftover steak can be stored in an airtight container in the refrigerator for up to 3 days. The mustard sauce can also be stored separately and used as a delicious dipping sauce for other dishes.
  • Feel free to customize the marinade and sauce ingredients to suit your personal taste preferences. You can experiment with different herbs, spices, and condiments to create your signature flavor profile.

Indulge in the succulent flavors of this Marinated Flank Steak with Mustard Sauce recipe and watch as it becomes a staple on your menu for gatherings and family dinners alike!
