Begin by making the zabaglione. In the top of a double boiler, beat the egg yolks and 120g sugar until they turn an ivory color.

Whisk the mixture gently over simmering water until it thickens. Once thickened, allow it to cool.

While the zabaglione cools, prepare the orange zest by cooking it with the juice until the zest is soft and the juice thickens. 
- 
Mix the orange zest and juice into the zabaglione. 
- 
Soften the gelatin in cold water, then add it to the zabaglione mixture. 
- 
In a separate bowl, blend the mascarpone cheese with the zabaglione mixture. 
- 
Slowly add the cream to the mascarpone and zabaglione mixture, blending until smooth.
