Pan-Fried Salmon with Chili Basil Sauce
Ingredients:
- 500 grams (2 pieces) salmon steaks
- 1 lime or lemon
- 20 fresh basil leaves
- 8 cloves garlic
- 2 tomatoes
- 4 shallots
- 2 large red chilies
- 8 bird’s eye chilies (adjust to taste)
- 2 candlenuts
- Salt, pepper, and sugar to taste
Instructions:
-
Marinate the Salmon:
- Start by marinating the salmon steaks. Squeeze the juice of the lime or lemon over the fish, then season both sides with salt and pepper. Allow the salmon to marinate for about 15 minutes to absorb the flavors.
-
Prepare the Spice Mixture:
- In a small pot, briefly boil the shallots, garlic, red chilies, and tomatoes until they soften slightly. Remove from heat, drain, and set aside to cool.
-
Blend the Spice Mixture:
- Once the boiled ingredients have cooled, blend them into a smooth paste. Using a mortar and pestle can be preferable for a more authentic texture.
-
Add Flavorings:
- To the blended spice mixture, add salt and candlenuts. Blend again to combine well.
-
Incorporate Basil:
- Stir the fresh basil leaves into the blended spice mixture. The basil will infuse its aroma and flavor into the sauce.
-
Cook the Salmon:
- Heat a non-stick skillet or grill pan over medium heat. Pan-fry the salmon steaks for approximately 30 seconds on each side, or until they are cooked to your desired level of doneness. Remove from the pan and place on a serving plate.
-
Prepare the Sauce:
- In the same skillet, sauté the blended spice mixture for about 1 minute. This step helps to cook off excess moisture from the tomatoes and intensifies the flavors of the sauce.
-
Serve:
- Spoon the chili basil sauce generously over the cooked salmon. Serve immediately and enjoy the vibrant flavors of this dish.
This dish beautifully combines the richness of pan-fried salmon with the fresh and zesty flavors of a homemade chili basil sauce, making it a perfect choice for a flavorful and satisfying meal.
