Pindang Serani Ikan Patin

Jeruk Nipis 1 piece
Bawang Merah 4 pieces, thinly sliced
Bawang Putih 3 pieces, thinly sliced
Jahe 1 thumb-sized piece, roasted and crushed
Lengkuas 1 thumb-sized piece, roasted and crushed
Kunyit 1 thumb-sized piece, roasted and crushed
Serai 1 stalk, crushed
Daun Jeruk 3 leaves
Daun Salam 2 leaves
Daun Kemangi 2 bunches
Tomat Merah 2 pieces
Cabe Rawit 10 pieces
Air as needed
Garam to taste
Gula to taste

Instructions

  1. Prepare the Fish: Start by washing the ikan patin thoroughly. Rub the fish with juice from the jeruk nipis and let it marinate for a few minutes before rinsing it clean.

  2. Sauté the Aromatics: In a pan, heat some oil and sauté the bawang merah, bawang putih, jahe, lengkuas, kunyit, and serai along with the daun jeruk and daun salam until fragrant.

  3. Cook the Broth: Add water to the sautéed mixture and bring it to a boil. Once boiling, incorporate the diced tomat and cabe rawit, seasoning with garam and gula to taste. Adjust the flavor as needed.

  4. Add the Fish: Carefully place the ikan patin into the pot and let it cook without stirring too frequently to maintain the fish’s structure. Allow it to simmer until fully cooked.

  5. Finish with Herbs: Just before serving, fold in the daun kemangi for a fresh flavor.

  6. Serve: Ladle the dish into bowls, garnished with a sprinkle of fried shallots on top for added texture and flavor.
