Homemade Sardine Recipe

Ingredients:

  • 3 whole white pickled sardines (I used pickled sardines in a basket)
  • 7 kaffir lime leaves, torn
  • Ground Spices:
    • 6 red chilies
    • 6 shallots
    • 4 cloves garlic
    • 2 tomatoes

Instructions:

  1. Prepare the Sardines:

    • Begin by frying the pickled sardines until they are crispy. Remove the bones and cut the fish into pieces (I cut each sardine into 8 pieces).
  2. Cook the Spices:

    • In a pan, sauté the ground spices (red chilies, shallots, garlic, and tomatoes) along with the torn kaffir lime leaves. Cook until the spices are fragrant and the oil begins to separate from the mixture. This step is crucial as it builds the depth of flavor in the dish.
  3. Combine and Season:

    • Add the prepared sardines to the pan with the sautéed spices. Season with salt to taste (do not add sugar). Allow the sardines to simmer in the spice mixture until they are well coated and the flavors meld together.
  4. Serve:

    • Once the sardines are cooked through and the spices have fully infused, turn off the heat. Serve the sardines hot with steamed rice and crispy crackers. Enjoy the delicious flavors!
