Pindang Tongkol Kuah Segar: A Refreshing Indonesian Delight

Ingredients:

  • 1/4 kg pindang tongkol (skipjack tuna)
  • 3 cloves garlic
  • 3 shallots
  • 1/2 large onion
  • 1 green or red tomato
  • Salt, to taste
  • Sugar, to taste
  • Water, as needed
  • Oil, for frying

Preparation Steps:

  1. Prepare the Fish: Start by cutting the pindang tongkol into your desired size. Heat oil in a frying pan and fry the fish until it turns golden brown, being careful not to let it become too dry. Once cooked, set the fish aside to cool.

  2. Chop the Aromatics: While the fish cools, finely slice the shallots, garlic, onion, and tomato. The freshness of these ingredients will infuse your dish with vibrant flavors.

  3. Sauté the Aromatics: In the same pan used for frying the fish, add a bit more oil if necessary. Begin by sautéing the sliced shallots and garlic until they are fragrant and turn slightly golden. Next, add the sliced onion and stir until all the aromatics are well combined.

  4. Create the Broth: Pour in enough water to cover the sautéed ingredients, then add the sliced tomato. Season the mixture with salt and sugar, adjusting to taste. Allow the broth to come to a boil and let it simmer until it reduces slightly, concentrating the flavors. Feel free to adjust the amount of broth based on your preference.

  5. Combine and Serve: Once the broth is ready, turn off the heat and allow it to cool slightly in the pan. After it has cooled down, gently incorporate the fried pindang tongkol into the broth, ensuring that the fish absorbs the delicious flavors of the sauce. Finally, transfer the dish to a serving plate, and your Pindang Tongkol Kuah Segar is ready to be enjoyed.

Note: To prevent the fish from becoming tough, do not mix it into the broth while cooking. This simple step ensures a tender and delightful eating experience.

This dish, rich in flavors and textures, showcases the essence of Indonesian cuisine and is perfect for any occasion. Enjoy the harmony of tastes with steamed rice or your favorite side dish!
