Ingredients
Broth Preparation
- 1 liter of water, bring to a boil
- 1/2 lemon, juiced
- 1 tablespoon of salt

- 1/2 kilogram of salmon head, cleaned
Aromatics
- 3 bird’s eye chilies, sliced (optional)
- 2 inches of ginger, sliced
- 1/2 an onion, sliced
- 1 tomato, sliced
- Celery, to taste

- 1 tablespoon of salt, heaping
- 1.5 to 2 tablespoons of sugar
- 1 teaspoon of ground black pepper
- 1/2 teaspoon of mushroom broth powder
- 1/2 a large lemon, juiced

Preparation:
- Clean the salmon head thoroughly and set aside.
- In a large pot, bring 1 liter of water to a boil. Add the juice of 1/2 a lemon and 1 tablespoon of salt. Stir to combine.
- Allow the salmon head to rest with the lemon and salt mixture for 30 minutes. Longer resting times are acceptable.
