Fresh Salmon Head Soup

Ingredients

Broth Preparation

  • 1 liter of water, bring to a boil
  • 1/2 lemon, juiced
  • 1 tablespoon of salt

Main Ingredients

  • 1/2 kilogram of salmon head, cleaned

Aromatics

  • 3 bird’s eye chilies, sliced (optional)
  • 2 inches of ginger, sliced
  • 1/2 an onion, sliced
  • 1 tomato, sliced
  • Celery, to taste

Seasonings

  • 1 tablespoon of salt, heaping
  • 1.5 to 2 tablespoons of sugar
  • 1 teaspoon of ground black pepper
  • 1/2 teaspoon of mushroom broth powder
  • 1/2 a large lemon, juiced

Instructions

  1. Preparation:

    • Clean the salmon head thoroughly and set aside.
    • In a large pot, bring 1 liter of water to a boil. Add the juice of 1/2 a lemon and 1 tablespoon of salt. Stir to combine.
    • Allow the salmon head to rest with the lemon and salt mixture for 30 minutes. Longer resting times are acceptable.
  2. Cooking:

    • Add the sliced ginger to the boiling water, followed by the salmon head. Allow the water to return to a boil.
    • Once boiling, add the sliced onion, bird’s eye chilies (if using), and the seasonings (salt, sugar, ground black pepper, and mushroom broth powder). Stir to combine and taste to adjust the seasonings as needed.
    • Continue boiling until the water returns to a rolling boil. Then, add the sliced tomato. Let the soup boil until the tomato and other ingredients are fully cooked.
  3. Finishing:

    • Turn off the heat and add the celery to the pot.
    • Let the soup rest for a few minutes to allow the flavors to meld.
  4. Serving:
