Salmon Head Soup
Ingredients:
- 2 salmon heads
- 2 limes, juiced
- 5 shallots, thinly sliced
- 5 cloves garlic, crushed and sliced
- 1-inch piece fresh turmeric, crushed
- 1-inch piece fresh ginger, crushed
- 3 bay leaves
- 3 kaffir lime leaves
- 5 bird’s eye chilies
- 3 starfruit, sliced
- 2 scallions, chopped
- Salt, to taste
- Pepper, to taste
- Optional: a dash of seasoning powder (such as Royco)
Instructions:

Prepare the Salmon Heads:
- Clean the salmon heads thoroughly and rub them with lime juice and a pinch of salt. Set aside.

Sauté the Aromatics:
- In a large pot, heat a small amount of oil over medium heat. Add the sliced shallots, crushed garlic, fresh turmeric, and fresh ginger. Sauté until the mixture becomes fragrant and the shallots turn translucent.

- While the aromatics are cooking, place the sliced starfruit in a separate pot with enough water to cover them. Bring to a boil and cook until tender.
