Sambal Balacan Kembung Pete Limo

Ingredients

Ingredient Quantity
Ikan Kembung (Mackerel Fish) 2 pieces
Cabai Keriting (Red Chili) 10 pieces
Cabai Setan (Bird’s Eye Chili) 5 pieces
Bawang Putih (Garlic) 2 cloves
Bawang Merah (Shallots) 5 pieces
Terasi (Shrimp Paste) 1 piece
Kunyit (Turmeric) 1 finger-sized piece (optional)
Sereh (Lemongrass) 1 stalk (smashed)
Daun Jeruk (Lime Leaves) 3 leaves
Jeruk Nipis (Lime) 1 piece
Pete (Stink Beans) 1 stalk
Air Perasan Jeruk Limo (Lime Juice) 1 tablespoon

Instructions

  1. Prepare the Fish:
Begin by washing the ikan kembung thoroughly to remove any impurities. Once clean, coat the fish with juice from the jeruk nipis (lime) and allow it to marinate for a while to eliminate any fishy odor.

  2. Make the Spice Paste:
In a mortar and pestle, combine the cabai keriting, cabai setan, bawang merah, bawang putih, kunyit (if using), and terasi. Grind these ingredients together until they form a smooth paste.

  3. Fry the Fish:
Heat oil in a frying pan and fry the marinated ikan kembung until it is crispy and golden brown. Once cooked, remove the fish from the oil and let it drain on paper towels to remove excess oil.

  4. Sauté the Spice Mixture:
In the same pan, use the leftover oil to sauté the ground spice paste along with the smashed sereh and daun jeruk. Stir-fry until the aroma fills the kitchen, ensuring to season with salt and sugar to taste.

  5. Combine the Ingredients:
Add the pete that has been cut in half, followed by the fried ikan kembung. Gently toss the ingredients together to ensure the fish and pete are well coated with the aromatic spices.

  6. Add Lime Juice:
Finally, drizzle in the air perasan jeruk limo (lime juice). Be careful not to cook it for too long after adding the lime juice, as you want to preserve its bright, tangy flavor.

  7. Serve:
Your delicious Sambal Balacan Kembung Pete Limo is now ready to be served! Enjoy this dish with steamed rice for a delightful and flavorful meal.
