Description

I love this different method of cooking Brussels sprouts. Most of the work is in peeling the leaves, after that it just takes minutes to cook them. I found this recipe in Sunset Magazine.

Instructions

Step 1: Prepare the Brussels Sprouts Leaves

  1. Rinse and drain the Brussels sprouts.

  2. Cut about 1/4 inch off the stem end of each sprout.

  3. Begin peeling the leaves.

    • When it becomes difficult to peel farther, trim off another 1/4 inch.
    • Continue removing leaves until all sprouts are done.
    • Discard the cores.

Step 2: Saute the Brussels Sprouts

  1. Heat a 10-12 inch frying pan over medium-high heat.

  2. Add olive oil to the hot pan.

  3. Toss in the shallots, Brussels sprout leaves, parsley, and fresh or dried thyme.

  4. Stir everything together.

    • Cook until the sprout leaves are bright green and slightly wilted.
    • You want them to still have a bit of crunch, about 3 minutes in total.

Step 3: Season and Serve

  1. Add salt and pepper to taste.
  2. Give everything a final toss.
  3. Serve your delicious sauteed Brussels sprouts leaves hot and enjoy!

Tips and Tricks

  • Choosing Brussels Sprouts: Look for firm, bright green sprouts without yellowing or browning.
  • Peeling Leaves: This might seem time-consuming, but it’s worth it for the delicate texture.
  • Customize Flavors: Add a squeeze of lemon juice or a sprinkle of red pepper flakes for extra zing.
  • Storage: These sprouts are best enjoyed fresh, but you can store leftovers in an airtight container in the fridge for up to 3 days.
