Instructions

  1. Prepare the Courgettes: Begin by grating the courgettes and sprinkling them lightly with salt. Allow them to rest in a colander placed in the sink for as long as possible to draw out excess moisture. After some time, gently squeeze the grated courgettes to eliminate any remaining water.

  2. Mix Dry Ingredients: In a mixing bowl, combine the plain flour (or gram flour) with the baking powder, ensuring they are well blended.

  3. Combine Ingredients: Add the prepared courgettes, finely chopped onion, defrosted peas, chopped garlic, salt, chopped green chilli, chopped coriander, chilli powder, garam masala, and cumin seeds to the bowl. Using your hands, squeeze and mix all the ingredients thoroughly. If the mixture feels too dry, you can add a small amount of water to achieve the desired consistency.

  4. Heat the Oil: In a non-stick frying pan, heat about 2 tablespoons of oil over medium heat.

  5. Fry the Fritters: Using a large spoon, scoop a generous amount of the mixture and place it in the hot pan. Gently press down on the fritter to flatten it, taking care as the mixture may be sticky. Shallow fry the fritters, adjusting the heat as necessary to prevent burning.
