Spicy Flaked Tuna (Tongkol Suwir Pedas)

Ingredients:

  • 1 whole tuna (tongkol)
  • 6 shallots
  • 3 garlic cloves
  • 1 thumb-sized piece of galangal (crushed)
  • 10 bird’s eye chilies (cabe rawit)
  • 3 large red chilies
  • 2 stalks of scallions
  • 1 tomato
  • Juice of 1 lime
  • Sugar to taste
  • Salt to taste

Steps:

  1. Prepare the Tuna: Begin by cleaning the tuna and rubbing it with lime juice to neutralize any fishy odor. Steam the tuna for approximately 15 minutes, or until it is cooked through.

  2. Prepare the Aromatics: While the tuna is steaming, finely chop the shallots, garlic cloves, scallions, and red chilies. Slice the tomato into small pieces. Crush the galangal to release its aromatic oils.

  3. Shred the Tuna: Once the tuna has cooled slightly, remove it from the steamer and flake it into bite-sized pieces.

  4. Cook the Aromatics: Heat a generous amount of oil in a pan over medium heat. Add the shallots, garlic, scallions, red chilies, and bird’s eye chilies. Sauté until the mixture becomes fragrant and the shallots are softened.

  5. Combine Ingredients: Add the crushed galangal and flaked tuna to the pan. Stir well to combine all ingredients, allowing the tuna to absorb the flavors. Cook until the mixture is slightly dry and well-mixed.

  6. Season: Adjust the seasoning with salt and sugar to taste. Continue to cook for a few more minutes to let the flavors meld together.

  7. Serve: Transfer the spicy flaked tuna to a serving dish and enjoy while still warm. This dish is best served hot to fully savor the flavors.
