Spicy Mackerel (Ikan Kembung Balado) Recipe

Ingredients:

  • 3 whole mackerel (Ikan Kembung; adjust quantity based on preference)
  • 1 lime (for juicing)
  • 10 red chilies
  • 5 shallots
  • 3 garlic cloves
  • Salt, sugar, and seasoning to taste

Instructions:

  1. Prepare the Mackerel: Start by thoroughly cleaning the mackerel under cold running water. Pat them dry with paper towels. Rub the fish with salt and squeeze the juice of the lime over them. Allow the fish to marinate for a few minutes.

  2. Fry the Mackerel: Heat oil in a frying pan over medium heat. Once hot, fry the marinated mackerel until they are golden brown and cooked through. Ensure they are not overcooked; they should remain moist and tender.

  5. Combine Fish and Spices: Once the spice paste is cooked, add the fried mackerel to the pan. Gently toss and stir the fish in the spice paste until it is evenly coated and heated through.

  6. Adjust Seasoning: Taste and adjust the seasoning as needed, adding more salt, sugar, or seasoning to suit your preferences.

  7. Serve: Transfer the spicy mackerel to a serving plate. Enjoy it hot with steamed rice.
