Spicy Sardines in Easy Sauce (Low Odor)
Ingredients:
- 1 small can of extra spicy green sardines (ABC brand recommended)
- 1 tbsp lime or lemon juice
- 1 cm piece of ginger, grated
- 1 cm piece of ginger, smashed
- 1 cm piece of galangal, smashed
- 2 bay leaves
- 1 cup water (adjust as needed)
- 2 tbsp chili sauce (optional, ABC brand recommended)
- 1 tbsp tomato sauce (optional, ABC brand recommended)
- Ground Spices:
- 2 cloves garlic
- 1 shallot
- Chopped Spices:
- 12 cloves garlic
- 12 shallots
- 5 orange bird’s eye chilies (adjust to taste)
- 3 green chilies (adjust to taste)
- 3 curly red chilies (adjust to taste)
- 1 medium-sized tomato
- Salt
- Brown sugar (or to taste)
- Cooking oil

Prepare the Ingredients:
- Grind the garlic and shallot for the ground spices.
- Finely chop the garlic, shallots, bird’s eye chilies, green chilies, curly red chilies, and tomato for the chopped spices. Set aside.

Heat some cooking oil in a pan. Sauté the ground spices (garlic and shallot) along with the grated ginger until fragrant.

Add the chopped spices (garlic, shallots, chilies, and tomato), smashed ginger, smashed galangal, bay leaves, salt, and brown sugar. Stir-fry until the spices are wilted and fragrant.

Pour in water according to your preferred consistency and let it simmer until it thickens slightly.

Add the canned sardines, lime or lemon juice, chili sauce, and tomato sauce. Stir gently to combine all ingredients evenly. Taste and adjust seasoning if needed.
