Ingredients

For the Fish

  • 2 whole red snapper, cleaned
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Juice of 1 lime
  • 2 scallions, diagonally sliced
  • 1 kaffir lime leaf, thinly sliced
  • 1 carrot, cut into matchsticks
  • 5 whole bird’s eye chilies
  • 5 bilimbi, sliced diagonally

For the Marinade

  • 1 tablespoon Raja Rasa sauce
  • 1 tablespoon Lee Kum Kee seafood marinade
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • Salt and sugar to taste
  • Olive oil for sautéing

For the Aromatics

  • 1 small onion, finely chopped
  • 3 cloves garlic, crushed and minced
  • 1 piece ginger, lightly charred, peeled, crushed, and minced

Instructions

  1. Prepare the Fish:
Start by thoroughly washing the red snapper under running water. Then, rub the fish with salt, black pepper, and lime juice. Allow it to marinate briefly, then rinse and steam until cooked through, discarding any water that collects in the steaming bowl.

  2. Add Aromatics:
Once the fish is cooked, sprinkle half of the sliced scallions over the top. Cover the steamer again and set aside some scallions for the sautéing step.

  3. Sauté the Aromatics:
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic, cooking until fragrant. Then, pour in all the liquid seasonings, stirring to combine.

  4. Incorporate Vegetables:
Add the matchstick carrots, sliced bilimbi, and whole chilies to the skillet. If the mixture seems too dry, feel free to add a splash of water. Taste and adjust the seasoning as needed.

  5. Top the Fish:
Pour the sautéed mixture over the steamed fish, ensuring even coverage. Sprinkle the remaining scallions on top for an extra burst of flavor.

  6. Final Steaming:
Steam the fish with the sauce for an additional 5 minutes, allowing the flavors to meld beautifully.

  7. Serve:
Serve the dish warm, accompanied by fluffy white rice, for a comforting meal that brings warmth and joy to your dining experience.
