Stir-Fried Tauge with Tofu
Ingredients

| Garlic | 2 cloves |
| Tomato | 1/2, chopped |

| Red chili pepper | 1, sliced |
| Bird’s eye chili | 3, to taste |
| Salt | To taste |
| Sugar | To taste |
| Royco or Masako (optional) | To taste |
Instructions
- Prepare Ingredients: Rinse the bean sprouts and tofu thoroughly.
- Cube and Fry Tofu: Cut the tofu into 8 cubes (adjust based on preference) and fry until lightly golden.
- Sauté Aromatics: In a pan, sauté the shallots and garlic until fragrant.
- Add Bean Sprouts: Incorporate the bean sprouts into the sauté, adding a splash of hot water (just enough to lightly steam).
- Combine Tofu and Seasoning: Add the fried tofu, sliced red chili, and bird’s eye chili. Stir well, seasoning with salt, sugar, and optional Royco or Masako.
- Finish with Fresh Ingredients: Finally, add the green onions and chopped tomato, mixing gently before serving.
