Instructions:

Prepare Tofu: - Start by cutting the tofu into small 1cm cubes. This size is perfect for soaking up all the flavors!

Slice and Dice Veggies: - Halve the onion and then finely slice it.
- Next, cut the carrot and green pepper into thin, matchstick-like strips. These add a delightful crunch to the salad.
 
- 
Mix the Salad: - In a large mixing bowl, combine the cubed tofu, sliced onion, carrot, and green pepper.
 
- 
Create the Dressing: - In a separate jar, make the dressing. Combine finely chopped red chilies, juice from the limes, brown sugar, fish sauce, and the aromatic fresh lemongrass.
- Close the lid tightly and give it a good shake. This will blend all the flavors together.

Marinate and Chill: - Pour the dressing over the tofu and veggies in the bowl. Mix everything thoroughly, ensuring the dressing coats every piece.
